BANANA NUT BREAD

1/2 cup butter
1 cup sugar
2 eggs
3 ripe bananas
2 cups flour
1 tsp. baking soda
1/2 cup chopped nuts (pecans or walnuts)

Cream butter and sugar. Add eggs, then mashed bananas and blend well. Slowly mix in
flour which has been sifted with soda. Add nuts to the last few tablespoons of flour
and stir in. Bake in large buttered loaf pan in 350 degree oven for 1 hour. Test--it
may require a little more time.

Hint: Mash bananas in skin before peeling. Remove skin and complete on board with a
fork.

Dear Elizabeth,
This evening I tried to resist the banana bread you gave me this afternoon. I cut a slice in 1/2 and then in 1/2 again. I said to myself that I just wanted a little taste. Just to see how it tasted. I ate the whole thing. It was wonderful. The best banana bread I have ever tasted in my life. It was awesome. I can't wait to try to make it myself.
Thanks.
Sylvia
