RICE PUDDING

6 c. milk
¼ t. salt
1 c. long grain rice
2 t. vanilla
½ c. sugar
½ t. nutmeg
2 T. butter
Combine first five ingredients and simmer until tiny bubbles form around the edges.  Simmer 1 hour.  Stir in vanilla.  Sprinkle with nutmeg.  Refrigerate.
