TUNA AND BISCUIT CASSEROLE

This is from memory but , often, that is how we cook—a little bit of this and a little bit of that.  It is very good and a pretty dish.

Sauté ½ c. onion and ½ c. green pepper in 2 T. butter.  When almost done, add 2 T. flour and heat until well mixed.  Blend in 2 c. milk, salt and pepper to taste, and bring to a boil.
In a 1 qt. casserole, flake a medium can of white meat tuna.  Pour the hot milk mixture over and keep warm.  Heat oven to 400 degrees.

Make baking powder biscuits using 2 c. flour.  Roll to about 12” by 16” rectangle.

Sprinkle with 1 c. shredded cheddar cheese and 1 small jar pimentos which have been finely chopped.  Roll dough like jelly roll, cut in ½ inch slices.  Place closely on top of tuna mixture.  Bake about 15 minutes until biscuits are done through.  If there are biscuits left, they may be baked separately.
