ELIZABETH LAMB’S NEW FAVORITE BISCUITS

2 cups self rising flour 
¼ c. vegetable shortening
2/3 c. buttermilk

Work shortening into flour until the size of peas. Make well in center and add buttermilk.  Gently work into dough.  Put on floured board and pat to about ½ inch.  Place cut biscuits on lightly greased baking sheet and bake at 400 degrees for 14 minutes or until brown and crispy.

ELIZABETH'S NEWEST FAVORITE BISCUITS (JAN. 2012)

4 2/3 c. biscuit mix 

5 T. powdered buttermilk

1 teaspoon baking soda

1 1/3 c. water

1 egg

Pre-heat oven to 400.  Mix dry ingredients together well.  Quickly stir in water until flour mixture is dampened.  Place on board which has been generously sprinkled with biscuit mix.  Knead dough just until it comes together and is smooth enough to roll.  Roll to about 1/2 inch.  Cut to desired size and place on baking sheet which is covered with parchment paper.  Beat egg with about 2 T. water and brush on the tops of the biscuits.  Bake 10 to 12 minutes
